The Post Chicken & Beer has thrilled Fort Collins residents (and Guy Fieri) with its gluten-free fried chicken since 2020, when it began operating out of Jax Fish House & Oyster Bar.

Now, Big Red F Restaurant Group, which owns The Post and Jax, is bringing a brick-and-mortar location to the Choice City. Currently, sit-down locales only exist in Lafayette, Longmont, Denver and Boulder.

"We had folks driving down from Fort Collins to our Longmont and Lafayette Post locations for our hot chicken and cold beer, just like they used to drive to Boulder and Denver to Jax before we opened Jax FoCo in 2011," said Dave Query, founder of Big Red F Restaurant Group, in a press release. "Now they'll have their own Fort Collins Post for dine-in, takeout and delivery."

The new eatery will take over the old IHOP at 1002 S. College Avenue, which was previously projected to be a vegan restaurant. 

The building is currently under construction, but Query estimates that The Post will open as soon as this spring.

Once it does, residents will be able to enjoy their fried chicken, salads, desserts and local beer in a large dining room with a south-facing outdoor patio.
