Main Street in Downtown Windsor is getting ready to welcome the third location of a hot spot known for it's whiskeys and pints of bacon.

William Oliver's is on it's way to the Town of Windsor, joining Betta Gumbo in a recent trend of expansions into the Town. This is great news, in my opinion. The more the merrier, I say, when it comes to Windsor and Downtown, and William Oliver's is going to fit right in.

Though I've not yet been William Oliver's second location in Lafayette, I have frequented the original location in Fort Collins at Timberline and Drake many times. My brother and I love going there to play gin rummy and have a couple of drinks.

Though my brother and I stick to beer, William Oliver's is known for their selection of whiskeys, whiskies, and other fine distilled spirits. Of course, they are also WIDELY known for their bacon.

Even when you Google them you find:

They don't shy away from telling you how much they love bacon. I'm not sure where that comes from. Probably just one of those things when they were coming up with their grand plan, '...AND, we're going to have bacon! Who doesn't love bacon?!'

I did reach out to Ryan Wallace of William Oliver's about the new location coming to Windsor, east of 5th Street on Main, a few doors down from Poudre Pet and Feed Supply.

When do you hope to open in Windsor?

We were originally hoping for a March opening, but it will likely be closer to June or July [2022.]

Will you be putting a patio in the back?

Yes, we will have a patio out back. It should be pretty nice in the summer time since it will be on the north side of the building. We hope to have heaters installed to make it usable in the winter too. 

Why Main Street in Windsor?

We really wanted to be downtown and fell in love with this particular building. It's a neat building that has been a part of Windsor since the early 1900s (the exact date of construction is not known, but it was likely between 1906-1911). The Town of Windsor has been putting so much effort into revitalizing Main Street and we want to be a part of that. 

How will the Windsor location be different from the other two William Oliver's?

For Windsor, we are very excited that we will be able to have a Snug that is actually attached to the bar, which is much more reminiscent of the original pub snugs. A snug is just a small, semi-private, room in a pub. Outside of that, it will be a very similar look and feel. And we will definitely be cooking up the same tasty bacon!
