Big news about Old Town Fort Collins has surfaced. The area that will soon be vacated by Beau Jo's Pizza on Mountain and College has a new tenant!

A restaurant called The Kitchen, a "farm-to-table eatery that uses locally sourced food" will be moving in.

The Kitchen started in Boulder and has a location in Denver as well. Don't be afraid that we're losing Beau Jo's, it will just be re-locating to the corner of College and LaPorte.

According to the Coloradoan, the co-founder of The Kitchen Community chose Fort Collins partly because of their ties to the Poudre School District. The Kitchen Community is "A nonprofit that brings vegetable gardens called “learning gardens” to schools and community spaces across the country. It works with Poudre School District and dozens of other districts across the country, reaching 60,000 kids every school day."

You can read more about the restaurant's plans as well as interviews with the owners from the Coloradoan. They say there is no specific date for The Kitchen's opening, but they are hoping for spring of 2014.

I've never eaten at The Kitchen before, but the first line of their mission statement gets me pretty excited about it.

We believe that gathering around the table and sharing good food and drink is what connects us as family, friends and a community.
