This Colorado Mexican restaurant made it with 30 other restaurants throughout the country on this list. While they offer up your traditional Mexican favorites, they also offer fare you won't find anywhere else in the state.

The Mexican restaurant chain first started in Austin, Texas back in 1982 and has grown considerably since breaking ground on their first restaurant. They open a second Colorado location this year.

So you say you love to try new, exotic things. Well, how about a taco with lion meat in it?
