Townsquare Media Northern Colorado is highlighting different local restaurants that are recovering and reopening after the COVID-19 pandemic with a NoCo Restaurant Spotlight series.

Rainbow Restaurant has been a popular breakfast and lunch spot in Fort Collins for more than 40 years.

The 212 W. Laurel St. eatery that was an early local pioneer in offering plant-based and vegetarian meals also fires up a separate grill for the Choice City's carnivores.

We sat down with Rainbow Restaurant general manager Daniel Jones about how the storied establishment is rebounding from the pandemic:
