I've never been a big breakfast person.

Some of my friends and family have expressed on several occasions how they could eat breakfast for every meal of the day... some have even said they prefer breakfast over other meals - for years I never understood how they could say such a thing.

But time has gone on and over time, some of my thoughts and opinions have changed.

I am happy to report, specifically to every breakfast lover out there, that I've crossed away from the dark side and have found a new liking for "the most important meal of the day".

Although It's still not my favorite meal by any means, there is one breakfast dish that I constantly find myself craving... and although I would still be the first person to say that I'd never replace another meal with breakfast, I could consider doing the unthinkable for one breakfast dish and one breakfast dish only -

Eggs Benedict. 

I can't recall the first time I had an eggs benedict, but I have no doubt that I must've loved it because it continues to be one of the only things - if not, the only thing - I order when I go out for breakfast.

The classic eggs benedict is a fairly simple dish to create with only four ingredients: eggs, bacon, English muffin, and hollandaise sauce.

According to myrecipes.com, Delmonico's, a restaurant located in New York City's Financial District that has been around for nearly two centuries claims that eggs Benedict was originally created for and named after restaurant regulars Mr. and Mrs. LeGrand Benedict in the 1860s.

“What I know is simply that Mr. and Mrs. LeGrand Benedict came all the time,” chef Olivia said. “They had eaten everything on the menu, they were tired of the menu, and they asked the brothers to create something new.”

And so, legend has it that the Delmonico brothers, along with their chef, Charles Ranhofer, created the popular breakfast dish that we know well today.

Regardless of who created the Eggs Benedict and where it was first served, I just know I love it - and that's a bold thing for me to say about any breakfast dish.
