Game Day Eats: Beer Battered Onion Rings [Recipe]
College football season is finally back, and while week one officially kicks off next Thursday, we're lucky enough to get a little teaser this weekend with games featuring own hometown boys, CSU vs. Hawaii and Wyoming vs. New Mexico State. If you're planning on hosting a watch party, or are headed out to one and need something to bring, these beer battered onion rings are sure to win over the group.
Ingredients
- 2 (or more) large white onions
- 1 cup flour
- 2 tablespoons cornstarch
- 1/4 teaspoon Cajun seasoning
- 1 egg
- 3/4 cup beer
- Oil for frying
- Mix together the flour, cornstarch, Cajun seasoning, egg and beer in a bowl, but leave it a little lumpy
- Pre-heat the oven to 200°
- Fill a big pot with oil and heat until it starts to lightly bubble
- Dredge the onion rings through the batter and add to pot, cooking for 3-4 minutes, or until golden brown and crispy
- Transfer cooked rings to a baking sheet and keep warm in the oven while the other batches are frying
