Two of the '50 places in America' that The New York Times is 'most excited about right now' are here in Colorado, according to the publication's 'The Restaurant List 2021.'

'They’re not ranked, but together they reflect the rich mosaic of American dining — from the melding of Thai curry and Texas brisket in the Pacific Northwest, to heritage crab rice on the South Carolina coast, to vegan soul food in the East Village,' The New York Times said. The New York Times said that it has spent almost two years putting together the list of 50 restaurants.

On that list is Denver's Comal Heritage Food Incubator, which is unlike anywhere you've ever dined, most likely. Its website said the food center formed in 2016 as a direct response to the RiNo area's gentrification. Comal is a 'multi-purpose' kitchen incubator, which means it also operates as an 18-24 month training program for kitchen entrepreneurs to 'earn while they learn,' serving from-scratch heritage foods.

The New York Times said that Comal's mission is to train female immigrants and refugees with the skills they need to launch their own businesses. Comal has helped businesses like Prieto's Catering, Zaki Mediterranean Cuisine, La Catrina Grill and Jebena Ethiopian Coffee & Culture launch into their own, independent businesses.

The other restaurant to land on The New York Times' list is Frasca, a high-end Italian restaurant in Boulder, 'steeped in food and wine traditions of the northeastern region of Friuli-Venezia Giulia.' A four-course meal at Frasca is in the ballpark of $125, so we may just have to take The New York Times' word for this one.
