Mini-Muffins are the save-all in my house! They save me from giving my kids some crappy quick food. They can turn tears into smiles. Pair them with milk and call it lunch if you are out of ideas. I also enjoy having these around, as I am often the last one to eat and always starving (3 kids are exhausting). I cut the sugar where I can in my recipes. I almost always use bananas and have found if you use over-ripe bananas that have been frozen, then thawed, they produce an amazing amount of sweetness. I always use all whole wheat flour and I cut half the butter by replacing it with applesauce. I also use a few mini chocolate chips to make it seem more like treat, not a health food, don't judge.
