Thanksgiving can be a hectic time in the kitchen and you have so many other things you need to prepare, right? Instead of giving that bird all of the precious oven time, try this technique out to save what could possibly be hours this Thanksgiving!

This technique is called spatchcocking. You flatten out the bird to get a more even roast and more real estate when it comes to crispy skin everyone loves. I've tried this cooking technique when I smoked a turkey a few years ago and it worked quite well!
